Pancakes! Pancakes!
We all call for pancakes!
This morning I felt like having pancakes. Warm and soft, they just melt in your mouth.
Though, I have learned over the years just how unhealthy our standard flour based pancakes are for us. Besides the fact that most pancakes are loaded with GMO ingredients, simple carbohydrates, and tons of white sugar, they do nothing for us nutritionally at all! So what is the point in eating them if you can make something just as good - that is good for you!
Here is a quick recipe idea for turning your standard, waist expanding pancakes into delicious and hearty skinny jean pancakes ;) - now who doesn't want that?!
1 cup organic quick cook oats (Note: you can also get the gluten free kind if you suffer from gluten allergy!)
1 egg
1/2 cup almond milk (Note: you can use another type of nut milk if you would like)
1/4 tsp vanilla extract
Dash of sea salt or pink salt
Note: If you want to add some protein, add in 1/2 cup protein powder and an additional 1/4 cup almond milk.
Blend it up until it is smooth. Heat 1 Tbsp. butter, ghee, or coconut oil in a large skillet. Cook pancakes evenly on both sides! Wa-bam! Breakfast is served.
Toppings
Option A: Blend up fresh or frozen berries until a puree is formed. Drizzle it over the top for an all natural and antioxidant rich treat!
Option B: Can't get away from the syrup? Hey I get it. Just make sure to use organic maple syrup as dark as it comes. The more real the better. Just use it in moderation ok? It is still sugar :)
