Its National Soup Month - Here is a Not so Guilty Pleasure!

Day 4 - Can you believe we are on Day 4!? šŸ² Today is a soup that you can consider a ā€œcheat day soupā€ OR a ā€œguilty pleasureā€ type soup. Today I am going to show you how to turn a typically not as healthy soup into one that at least got your veggies in hidden in flavor šŸ˜‰. šŸ² ā€œYes mom, I had my vegetables ok? They were just covered in deliciousness, ok?ā€

Coconut Curry Soup (YUM!)

What are the benefits!?šŸ˜€

1. Ginger - helps with indigestion and nausea. Also helps boost the immune system. It is also anti-fungal and helps clean your system!

2. Garlic - boosts immune system to help you not get sick, a great food for cleaning toxins out of your body.

3. Bone broth - besides a huge punch of collagen - something that helps keep your hair and nails healthy and reduce joint pain, it also contains tons of minerals and nutrients, and boosts your metabolism. Who doesn’t want that?!

4. Coconut milk - great replacement for traditional milk and contains tons of healthy fats, not to mention vitamins. Just don’t over do it if you are looking to lose weight. Add more water and less coconut milk if you plan to eat this more often.

5. Red onion - I love you red onion. This baby has quercetin, which greatly helps protect from oxidative stress! I also found that it helps suppress viruses that cause psoriasis and cold sores. Woohoo! Not to mention that is contains allicin, which I understand helps reduce dandruff. You go Mr. Red.

6. Mushrooms - too many benefits to mention, so go look them up. Just know that some are good sources of selenium. And that is worth mentioning!!

7. Cilantro- think clean, clean, clean body! This will cleans those toxins right out of your body!

8. Of course green veggies!

Recipe šŸ˜€

Serves: 2 people

Ingredients *2 Tbsp. coconut oil *3 cloves garlic, minced *1 Tbsp. ginger, peeled and grated *3 Tbsp. Thai red curry paste (if you don’t want such a hot soup, try roasted red or green curry paste) (P.S. I hear that Mae Ploy is a good brand - watch out for odd ingredients in the other brands.) OR MAKE YOUR OWN!!!!! *8 oz. chicken breast, sliced and cut into 1 inch pieces *4 cups bone broth (basically just boil some GOOD chicken bones in water for about 4-6 hours. Remove bones. Keep broth)

FYI: be careful making soups or broths with store rotisserie chicken. The store actually uses spices that have gluten, soy, and other ingredients that might not be sourced well or could cause you an allergy. Best to use a fresh raw organic, well sourced chicken, baked it yourself, remove the chicken for another meal, and then use the broth.

*1 cup filtered water *2 Tbsp. fish sauce (I recommend the brand Red Boat) *2/3 cup full fat coconut milk (Best brand is Arroyo and you can get it on Amazon) *Handful (approx. 1 oz.) dry rice noodles (OR black rice for a healthier version) *1 lime, for juicing

Note: Here is where I want you to add some additional ingredients for health. Add in thin sliced red onion, sliced mushrooms, cilantro, and a green veggie. I would try Asian spinach or chard greens.

Add noodles or cooked black rice to your serving bowls. Add in sliced red onion, mushroom, and small chopped greens. Set bowls aside.

Heat oil in a large pot over medium heat. Add the ginger, garlic, and Thai curry paste. SautƩ for 5 minutes, stirring often. Add the chicken and sauce until chicken is mostly cooked through. Add bone broth, water, fish sauce, and coconut milk. Bring to a boil. Season as needed with salt (or if too salty, add some more water).

Pour the boiling soup over the noodles or rice, add a squeeze of lime juice, and 1 Tbsp. cilantro. Wait 2 minutes and serve.
