It is soup day 3!
Today’s soup is traditional - gives you a good feeling, a warm cozy center, one that makes you feel better every time you eat it. That’s right folks…..it is Homemade Chicken Soup. 🍲 BUT wait! It is not necessarily totally traditional. Check out below how I turned this into a even more powerhouse soup. Enjoy!
Homemade Chicken Soup

What are the benefits!?😀
1. We all know how powerful chicken soup can be. Enough said. You know it will do your body good, just because it feels like home and that in itself will heal anyone. (hint: your good vibe allows your brain to send healing to your body)
2. As always, vegetable broth or mineral broth provides tons of vitamins and minerals that your body needs and doesn’t always get from your “main sources” - carb, protein, fat.
3. Garlic - boosts immune system to help you not get sick, a great food for cleaning toxins out of your body.

Recipe 😀
Go with your favorite version of chicken soup, but make sure to add the BONUS items to go from traditional chicken soup to super powerhouse chicken soup.
Note: There is no serving size here as you can make as much or as little as you want for this one.
Ingredients 1-2 lbs. organic whole chicken (get the good stuff ok?) Vegetable broth, homemade mineral broth, or homemade bone broth Spices: I like to throw in cumin and coriander and a little spice like cayenne. Oh and of course salt and pepper. Fresh spices are things like dill and parsley. Garlic Onion Any veggies - I used Asian spinach, mushrooms, carrots, and celery (cause that is what I had on hand!) But you can use anything that sounds good - just add some veggies of some kind - make sure there is a green one in there!
Bonus Items - that mean you should add these!!!!! **Black rice - also known as forbidden rice **Kombu (just a small piece)
**Ok what are these things? Well black rice can be found in bulk or right next to all the other rice. It is different from wild rice, so make sure to look for Forbidden rice. Why is this so much better? It tastes just like rice, but has A TON more nutrition and benefits for you. It is gluten free, loaded with fiber, and contains a major antioxidant, anthocyanin. Without getting too technical on you here, these dark pigmented foods are proven to aid in prevention of major illnesses and should always be in your diet! Make sure to rinse your rice really well before consuming. Also due to the higher levels of arsenic in darker rice, consume in moderation - like anything else.
Kombu is a type of kelp. You can find it in the Asian section in a package. All you need is a little piece. It sort of acts like the “bay leaf”, but provides tons more benefit. It has tons of iodine, which helps benefit the thyroid. It is also great for those with diabetes, because it good for insulin sensitivity. So not only does it impart immense, deep flavor, it gives you tons of benefits.
I like to bake a whole chicken with amazing spices. Then I shred off all the chicken and throw the bones into a big pot of water. I boil down the bones into bone broth. I remove the bones and have the broth. In a separate pan, sauté carrot, and celery for about 7 minutes. Add garlic and sauté for another minute.
Add this to the pot of broth. Rinse off a piece of kombu and add it to the broth. Also add black rice (yep just throw it in the pot - you can rinse it first if you want). Cook on medium high for about 20 -30 minutes. Remove kombu.
Continue to cook soup on medium. Add vegetables like leafy greens, mushrooms, etc. Then towards end of cooking add fresh herbs like thyme, parsley, or whatever flavor profile you like.
